Suggested Pairings: High intensity cheeses, cuts with good marbling, duck, lamb, spicy dishes, preferably baked and stewed such as barbecues and moles, chocolate-based desserts.

Description

Taste: On the palate, it is fresh, with marked and expressive tannins. Fresh and balanced acidity, good persistence and a pleasant finish.
Suggested Pairing: Pairs perfectly with lamb barbecue, pork shank, cochinita pibil, red mole with pork. Semi-mature cheeses.
